Beekeeping at 3,000 to 5,500 feet is its own discipline. Shorter seasons, colder winters, stronger nectar pulses — sourwood on the ridgelines, tulip poplar below, wildflower in the high meadows. The bees will teach you most of it. This is the part worth writing down first.

Elevation shifts everything. A colony in Blowing Rock (3,500 ft) runs three weeks behind one in Lenoir (1,200 ft) and a full month behind the Piedmont. Read by your zip, not by the catalog.

Three hive systems for 4,000 feet.

Mountain beekeeping punishes inflexible equipment. Each system below has a real following in the High Country — pick by temperament, climate, and how much you want to lift.

Most common · 8–10 frame

Langstroth

The standard. Stackable boxes, removable frames, full range of equipment at every vendor from Boone to Burnsville. In the mountains, run 8-frame mediums — full deeps of honey weigh 90 lbs and that's a back injury on a hillside. Two deeps for brood, mediums for honey supers. Insulate the top with a moisture-quilt box (newspaper, wood shavings, vented rim) instead of wrapping the whole hive.

Winter config: 2 deeps + 1 medium + quilt box. Mouse guard. Reduced entrance. Upper vent.

Top-Bar

One long box, bars across the top, combs hang free. No lifting, no extracting — crush and strain. Beautiful comb honey. Drawbacks at altitude: no supers means you can't separate honey from brood, and a strong flow short-circuits into swarm impulse. Run a follower board to keep the colony compact in spring and slide it back as they grow.

Winter config: follower board tight, bar-count reduced to cluster size, burlap across bars.

Warré

"The People's Hive." Small boxes stacked downward. Bees build natural comb, you add a box underneath. Two camps in the mountains: the purists who swap entire boxes and trust the bees, and the ones who quietly run a top-bar nest in the upper box. The system excels at overwintering — small cluster, top entrance, vertical heat column intact. The cost is no removable frames means no varroa monitoring without cutting comb.

Winter config: one full box of honey on top, top entrance only, no peeking until March.

What the Watauga club runs

Walk into any county meeting in the High Country and you'll find roughly 70% Langstroth, 20% top-bar, 10% Warré and everything-else. The experienced sideliners keep both — Langstroth for honey production, top-bar for comb honey and a teaching hive. New beekeepers who try to start with Warré often lose their first colony to a missed mite count. Start with Langstroth. Switch later if you want.

Three named pulses and a long, quiet summer. Mark your honey supers by what was blooming when they were filled — the jar will tell you later.

Mid-Apr

Red maple · first pollen

Not a honey flow, but the first big pollen event. Brood-rearing kicks off. Don't expect surplus honey.

Early May

Black locust · quick, intense

Two to three weeks. Pale, water-white honey. Weather-sensitive — a cold snap kills the flow. Mountain locations above 3,000 ft get this; lower elevations may barely see it.

Late May

Tulip poplar · orange-amber, robust

Five to six weeks below 3,500 ft, three to four above. Strong-flavored, darkening honey. The best surplus producer in the High Country. Pull supers before sourwood to keep varietals separate.

Late Jun · 3 wks

Sourwood · the prize

Oxydendrum arboreum on the ridges above 3,000 ft. Three weeks of weather-dependent flow. Premium honey, $20–30/lb retail. Bees forsake everything else. Requires supers drawn ahead.

Goldenrod · the understudy

Strong, distinctive smell during ripening. Dark amber, strong-flavored — winter feed honey, not table honey.

Aster · last pollen

Final protein source for winter bees. Get mite treatments done before this closes — winter bees raised on aster pollen are the cohort that survives.

Winter, the mountain way.

A well-prepped mountain colony does not freeze. It starves. It gets wet. It runs out of bees before it runs out of stores. Plan for those three failures.

Stores & heft

Target 60–80 lbs of honey for a High Country overwinter. Heft the back of the hive in November and again in January. A light cluster needs emergency feeding — candy board or sugar bricks directly above the cluster, not syrup. Syrup freezes in the comb.

Moisture, not cold

The colony fails by getting wet, not by getting cold. Add a quilt box (newspaper + wood shavings + vented rim), a Vivaldi board, or at minimum a popsicle stick under the inner cover. The bees generate heat from honey — your job is to vent the moisture.

Upper entrance

Drill a 3/4" hole above the brood boxes or notch the inner cover. This becomes the winter exit when the bottom is blocked by dead bees and snow. Cleansing flights happen on the rare 40°F+ day — give them a way out.

Wind & sun

Face colonies southeast, with a windbreak on the north and west. A pallet on the south side of a shed is classic. Don't put them in a hollow — cold pools sit there. Avoid full afternoon sun if you can, to prevent January thaws that break the cluster.

The rule of three. A mountain colony needs three things to survive December through March: enough stores it doesn't have to break cluster to forage, enough ventilation it doesn't stew in its own moisture, and enough bees born in fall that the cluster is large enough to keep the queen warm. If you only nail two of these, the colony usually dies. If you nail all three, it usually lives.

Swarm catching & the spring pulse.

A swarm in April is a gift. A swarm in June is a warning you missed something. Most High Country swarms happen between 10 AM and 2 PM on a sunny day after three cloudy days — the bees wait for the weather.

Trap-out boxes

Catch them on the way out. A 5-frame nuc box with one old comb and a queen lure (QMP, lemongrass oil) hangs 8–12 ft up on a tree line, 50–200 yards from your main apiary. Check every two weeks during swarm season. Move swarms at dusk.

Cut-outs (career mode)

A colony in a wall, barn, or hollow tree. Two-person job for a half day. Charge for it once you're sure, or you'll do it for free. Transfer brood frames into a Langstroth, leave the queen on the largest brood piece, expect 10–20% of foragers to return to the original nest.

Read the signs

Queen cups appeared two weeks ago. Drone brood is capped. Population is loud. The bees are hanging in a beard at noon on the front porch. Any one of these is a warning. All three together is a swarm Saturday.

Make splits, not catches

Cheapest swarm is the one you make yourself. Pull two frames of brood with adhering bees, a frame of honey, shake in another frame of nurse bees, and walk away. Recombine if the split fails to draw a queen.

Varroa. The constant.

If you keep bees in the High Country, you treat for varroa. There is no exception. The question is which treatment, when, and whether you've already lost.

Alcohol wash · monthly

300 bees from the brood nest, alcohol, count mites. Divide by 3 to get mites per 100 bees. Anything above 2 in spring or 3 in fall needs treatment, yesterday. Beekeepers who lose colonies are the ones who didn't count.

Treatment rotation

Spring: formic acid pads (MAQS or Formic Pro) while honey is off. Late summer: oxalic acid vapor (OAV), three treatments five days apart. Don't treat with the same active back to back. Rotate.

What doesn't work

Essential oils alone. Drone-trapping alone. Anything "natural" with no active ingredient. Powdered sugar rolls are monitoring, not treatment. Hop Guard and Apivar are losing efficacy in the Southeast.

When to write the colony off

Mite count above 10 per 100 bees, deformed wing virus visible, spotty brood pattern. Combine with a stronger hive (newspaper method) rather than treat. The remaining colony integrates the bees.

NC State position. The NC State Apiculture Program (Raleigh, with field trials at the Mountain Research Station in Waynesville) recommends always treating, never monitoring alone, and rotating actives annually. Threshold: 3 mites per 100 bees in spring, 5 in late summer. When in doubt, treat.

Queen rearing, the first year.

You don't need a grafting tool to raise a queen. You need a strong colony, a frame of eggs, and a calendar. The rest is letting bees do what bees do.

Method: cell punch

Press a 3/4" dowel into a frame of fresh eggs (less than 24 hours old). Disc goes into a hair-roller cage, into a cell-builder colony. Day 14, cells sealed. Day 16, queens emerge. Mark with the year's color (white 1/6, yellow 2/7, red 3/8, green 4/9, blue 5/0).

Method: walk-away split

Simpler. Take a frame of eggs, a frame of open brood, two frames of honey, shake in extra bees from two more brood frames, walk away. The queenless split raises emergency cells. Three weeks later, check for a laying queen. If none, combine and try again.

Timing for the High Country

Start cells in mid-May. Queens need 28 days from egg to mated laying — that's mid-June, when foragers are abundant and drones are mature. Late cells fail: not enough drones, not enough time to build up.

Local genetics

High Country bees are winter-hardy, swarmy, quick on the spring buildup. Buy local queens from regional breeders — Brushy Mountain, Mims, Blue Ridge, or the state program's Italian line. Avoid packages from the deep South.

Regional honey varieties.

The High Country produces some of the most distinctive varietals in the eastern US. Most of them never leave the county.

How to claim a varietal. Sourwood is the only one you'll see specifically labeled and tested. Reputable producers send samples to the NC State Apiculture Program for pollen analysis. Above 45% sourwood pollen, it can be labeled sourwood. Above 75%, it commands premium pricing. Below 45% is honey that contains sourwood, not sourwood honey.

Pollination contracts.

High Country pollination is not California's almond play. The contracts are small — pumpkin patches, orchards, bramble farms, the occasional cucumber grower. But the dollars are real and the timing is mountain-specific.

What grows in the High Country

Apples (Mitchell, Henderson), pumpkins and squash (Avery, Watauga), blueberries (small acreage but growing), brambles, cucumbers, and greenhouse tomatoes. Each has a different pollination window and colony-density requirement.

Typical rates, 2026

Apples: $75–$100 per hive for 2–3 weeks. Pumpkins: $125–$175 per hive. Greenhouse tomatoes: $200+ per hive per month, but high labor. Always get a written contract — liability is real if a grower sprays while your colonies are on-site.

Reading the contract

Look for: colony strength standard (typically 8 frames of bees), pesticide notification clause, water access, hive placement, and what happens if the bloom is short. Most pollination contracts in NC are handshake deals — get them in writing if you're moving more than ten hives.

Beekeepers' exemption

Under NC General Statute §106-65, the beekeeper is not liable for injuries caused by bees once they have left the hive. This only protects you if you've registered your apiaries with the NC Department of Agriculture.

Who you call when you don't know.

The strongest reason to keep bees in the High Country is the people who already do. Most of them are old, kind, and willing to answer the phone at 7 AM during a swarm.

Registration & legal notes.

North Carolina is one of the better-regulated states for beekeeping. None of what follows is hard, but all of it is required if you want to keep bees above-board.

Apiary registration

All apiaries with 10 or more colonies must be registered with the NC Department of Agriculture and Consumer Services. Below 10 hives, registration is voluntary. The certificate is free and gives you the beekeepers' exemption under §106-65. Renew every three years.

Honey house licensing

If you extract, bottle, and sell honey, you need a Honey House license from NCDA — separate from the cottage-food exemption. Tiered options below 250 hives; full commercial above. Inspection covers sanitation, water supply, pest control.

Local ordinances

High Country counties vary. Most have no specific beekeeping ordinance; some planned communities may prohibit. The default rule: reasonable beekeeping is allowed if you maintain a water source, manage aggressive stock, and don't obstruct public right-of-way.

Labeling rules

Honey must be labeled with net weight, ingredients ("honey"), and your name and address. If you claim a varietal (sourwood, tupelo), the claim must be verifiable. NC follows the FDA standard: honey must not have added sugars.

Antibiotic use

Terramycin is legal for foulbrood treatment with a Vet Feed Directive. Use only when you've confirmed AFB or EFB. Don't prophylactically treat with antibiotics — it contaminates wax and honey.

Report the diseases

American Foulbrood is a notifiable disease in North Carolina. The state apiary inspector will burn infected equipment. Hiding AFB kills neighboring apiaries. The State Apiarist's office is the right number.
